BREVE ABSTRACT: The invention relates to chitinolytic enzymes produced by P. janthinellum cells, having molecular mass by SDS-PAGE of about 40000-60000, a process for producing chitinolytic enzymes or N-acetyl-glucosamine, in which P. janthinellum cells are maintained in a medium under conditions suitable for the production of chitinolytic enzymes. Suitably, P. janthinellum cells are immobilized on a modified macroporous cellulose carrier and chitinolytic enzymes and N-acetyl-glucosamine are continuously produced. These chitinolytic enzymes are particularly adapted for the production of chitin degradation products and for inhibiting food spoiling microorganisms.
